CARROT CAKE MUFFINS 
1 3/4 c. flour
2/3 c. brown sugar
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
Dash of mace
1/2 c. crushed pineapple & juice
1/2 c. oil
1 egg, beaten
1 1/2 tsp. vanilla
1 c. grated carrot
1/2 c. raisins

Grease 12 muffin cups. In large bowl stir together dry ingredients. In another bowl stir pineapple, oil, egg and vanilla. Make a well in dry ingredients and add pineapple mixture and stir just to mix. Stir in carrots and raisins. Fill 2/3 full. Bake at 400 degrees for 15-20 minutes.
