BAYOU RICE 
1 lb. giblet
1 lb. ground meat
2 c. rice (steamed)
1 tbsp. garlic
1/4 c. celery
1/4 c. bell pepper
1/2 c. onions

Boil giblets with little salt and pepper until tender; reserve broth. Chop giblets small. Saute ground meat with seasoning together, add giblets and broth; season with salt and pepper to taste. Simmer for 15 minutes. Add rice, mix well and let simmer on low 5 more minutes, covered.
