WALNUT ROLL
4 eggs
3/4 c. sugar

Beat 10 minutes. 1/2 c. fine bread crumbs Few grains of salt 1 tsp. vanilla

Bake at 350 degrees for 18 to 20 minutes. Powdered sugar

Beat eggs and sugar until thick and light colored (better overbeat than underbeat). Fold in walnuts, bread crumbs, salt and vanilla. Pour into heavily greased and floured pan (10 1/2 x 16 inches). Bake and remove immediately and invert over powdered sugar-brown paper. Trim edges and roll up as a jelly roll. (I grease and line the pan with wax paper and peel the paper immediately. I don't bother cutting edges.) Sometimes cake will crack. Just spread with whipped cream.

Place on rack to cool. Unroll carefully. Spread with whipped cream and roll up again and place on plate to serve. (In place of brown paper I use a tea towel.)
