SOUTHERN BUTTERMILK CORNBREAD | |
1 c. yellow cornmeal 4 tbsp. all-purpose flour 1/2 tsp. baking soda 1 tsp. salt 1 tbsp. melted shortening or vegetable oil 1 egg 1 c. buttermilk Mix dry ingredients. Add egg, oil and buttermilk. Stir until well blended. Try to have heated your pan (round cake pan or small cast iron skillet) in the oven while preheating to 425 degrees. Take hot pan out of oven. Quickly spray with cooking spray and pour batter into pan. Put in hot oven. Bake 30-35 minutes or until light golden brown. Turn cooked bread out onto a dinner plate and cut into wedges. Serve with butter. |
