BLACK BEAN SOUP WITH RICE 
1 lb. black beans
3 to 4 cups water
2 tbsp. salt
1 tsp. garlic powder
1/2 tsp. oregano
1 bay leaf
2 large onions, chopped
2 green peppers, chopped
1/2 cup vegetable oil, divided
2 tbsp. vinegar
3/4 cup rice, cooked

Rinse and soak beans 10 to 12 hours. Bring to a boil. Simmer until beans are tender. Add salt. Add garlic powder, oregano and bay leaf. Sauté onion and pepper in 1/2 of oil. Add to beans and vinegar. Simmer until ready to serve. Add rice and remaining oil.
