CAJUN OKRA SLICES 
1/2 lb. okra
2 eggs
1 tbsp. water
3/4 c. all-purpose flour
1 1/2 tsp. Cajun spice blend
1/2 tsp. salt
1/2 tsp. vegetable oil

Prepare okra (wash okra, remove ends and cut in 1/2 inch slices). Mix eggs and water in small bowl. Mix flour, Cajun spice and salt in another small bowl. Dip okra into egg mixture, then coat with flour mixture. Repeat with remaining okra. Heat oil in 10-inch skillet until hot. Fry okra in oil in single layer over medium-high 4 to 5 minutes or until golden brown, turning halfway through cooking. 4 servings.
