MALAYSIAN FRIED RICE 
3 tbsp. corn oil or butter
5 cloves garlic, chopped
1 small onion, diced
8 shelled shrimps (optional)
1 1/2 cups rice (your choice)
1/2 cup roughly chopped cabbage
1 sliced red chili (deseeded)
1/2 cup chopped mushrooms (optional)
3 tbsp. soy sauce
1 tbsp. ketchup
1/4 tsp. ground white pepper
2 sunny-side-up fried eggs (optional)

Prepare rice according to package directions (I use a rice cooker).

Heat oil in large pan over medium heat. Sauté garlic and onion. Add shrimps, stir-fry till light pink. Add cooked rice and stir-fry for 2 minutes. Add cabbage, chili and mushroom. Stir-fry for 1 minute. Add soy sauce and ketchup, stir-fry for another 2 minutes. Season with pepper before taking off heat.

Serve topped with fried egg.

Serves 2.
