MEXICAN HOMINY 
Vegetable cooking spray
1/2 c. chopped onion
1 clove garlic, minced
1 (15 oz.) can yellow hominy, drained
1 c. chopped tomato
2 tbsp. canned, chopped green chilies
1/2 tsp. chili powder
1/8 tsp. salt
1/4 tsp. pepper
1/4 c. (1 oz.) shredded sharp Cheddar cheese

Coat a non stick skillet with cooking spray; place over medium-high heat until hot. Add onion and garlic; saute until tender. Stir in hominy and remaining ingredients except cheese. Spoon mixture into a 1 quart baking dish coated with cooking spray. Bake, uncovered at 350 degrees for 25 minutes. Sprinkle with cheese and bake 5 minutes. Yield: 4 servings.
