MEXICAN HOMINY 
2 tbsp. bacon fat
2 tbsp. flour
2 tbsp. chili powder
1 can tomatoes
2 c. water
1 tsp. salt
1/4 tsp. oregano
2 c. hominy
1/2 stick butter
10 oz. shredded cheddar cheese
1 lg. onion, chopped

Combine fat, flour, chili powder, tomatoes, water, oregano and salt in large bowl. Toast hominy in butter until lightly brown. Layer hominy, cheese, onion and tomatoes in greased baking dish. Repeat reserving 1/4 cup cheese for top. Bake at 350 degrees for 25 minutes.
