CORNBREAD 
4 tbsp. bacon drippings
2 c. white cornmeal, finely ground
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1 egg
1 1/2 c. buttermilk

Heat oven to 450 degrees. Put drippings in 9 inch skillet and pop into oven. While grease is getting hot, mix cornmeal, salt, soda, baking powder in a bowl. Add egg and buttermilk. Stir until blended. Remove skillet from oven, make sure grease covers bottom and sides. Pour hot grease into cornmeal mixture. If everything is perfect it will snap, bubble - mix until blended in. Pour mixture into skillet. Put into oven 20 to 25 minutes. Serves 6.
