PORK CHOP & SCALLOPED POTATO
BAKE
 
4 pork chops
2 tbsp. oil
1 onion, sliced
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1 c. milk
1 c. chicken broth
4 potatoes, pared & thinly sliced
1 tbsp. parsley

Preheat oven to 350 degrees. Grease a 13 x 9 inch pan. Brown pork chops in oil. Remove chops from pan; add onion rings and saute until tender. Remove from heat.

In saucepan, melt butter; stir in flour, salt, and pepper; cook 1 minute. Add milk and broth slowly. Cook, stirring constantly until sauce thickens and bubbles. Remove from heat.

Arrange sliced potatoes in prepared pan. Top with onion rings. Pour sauce evenly over potatoes and onions. Top with chops. Cover tightly with foil. Bake 1 hour. Uncover; bake 10 minutes longer or until chops and potatoes are tender.

For those wondering where to add the parsley. A recipe is written in order of ingredients used or added (as this one is)... Therefore, the parsley is sprinkled in after the potatoes & before the onion rings. Lynn, (been cooking for my family almost 59 years)

Awesome dish! Very tender & delishous! But I have one question, I've made this recipe several times & just realized that there is parsley in it but no where in directions does it tell you when to add it... lol

This was really good. I cut the salt in half and used olive oil. I may try adding a bit of cheese and garlic to the next one for a tad more flavor but it's very good just the way it is.

Great recipe! I made it tonight and my husband and I both loved it. The instructions didn't say when to add the parsley, but I added it at the end.
