BAKED STUFFED PORK CHOPS 
4 double pork chops with pocket
1 box Stove Top stuffing for pork
3 eggs, beaten, add salt and pepper and 1/4 tsp. garlic powder to beaten eggs
Flour
1 1/2 c. seasoned bread crumbs
Crisco

Prepare Stove Top stuffing according to package directions. Let cool. Stuff pockets of pork chops with stuffing. Flour chops, dip in egg, and coat with bread crumbs. In large pan, heat Crisco shortening and brown chops on all sides. Place chops in baking dish and cover. Bake at 350 degrees for 35 to 45 minutes.

I used store-stuffed chops, but I would try the cranberry Stove Top next time. The chops were very moist and tender. There was a LOT of egg left over. I will reduce to 2 eggs next time. I scrambled the remaining egg mixture and it was a very tasty side dish.

Excellent! Very moist pork chop. Added the applesauce to the stuffing as Heather suggested and it was nice and moist. Thanks Heather. I also would start out with two eggs, if you need extra you can add last minute. Next time I will also add some cranraisins in my stuffing mix.

Something that I like to add to my baked stuffed pork chops is cream of mushroom soup. I wait until there is 10 minutes left to cook, then I spoon over the top of the chops cream of mushroom soup. I continue to bake for the last 10 minutes and it's deliciou. If the soup is too thick for you try mixing it with some milk to loosen it up first.

I improvised a bit...I added cranraisins and apple sauce to the stuffing, per prior suggestions. I also added a packet of dry onion soup mix to the water, butter, and onions. I didn't have celery so I used a big dash of celery salt, and I boiled the cranraisins in the liquid to soften them up. It tossed the leftover egg, flour, and panko to the leftover stuffing and baked it...yummy! The only thing I will do next time is lightly salt and pepper the meat itself.
