FETA AND SPINACH SALAD WITH
BASIL DRESSING
 
1/2 c. olive oil
1/4 c. red wine vinegar
1 tbsp. dried basil
2 tsp. sugar
1 clove garlic, minced
Salt and pepper to taste
1 lb. fresh spinach, washed and torn
1 avocado, peeled and thinly sliced
1/2 red onion, thinly sliced
1/2 c. crumbled feta cheese
1/2 c. coarsely chopped walnuts, toasted
Greek olives

For dressing: Combine first 7 ingredients in blender. Chill. Shake well before serving.

For salad: Combine rest of ingredients, except the olives in large bowl. Pour dressing over salad. Toss. Garnish with olives.
