IT'S THE BANANAS | |
3 ripe bananas, peeled, either whole or sliced 3 tbsp. butter 3 tbsp. dark brown sugar 3 tbsp. lemon juice 3 tbsp. chopped pecans In a small skillet, melt the butter. Add sugar and lemon juice; blend. Add the bananas to the skillet. Simmer about 10 to 15 minutes, basting and turning, being careful to mash. (Cooking time will depend upon ripeness of the bananas.) Just before serving, add pecans. To serve 3. Serving Suggestion: Spoon over vanilla ice cream, or top with whipped cream or sour cream. The lightly sweetened bananas are also a good side dish with baked ham. When one must use up the bananas. This easy family treat can go plain or fancy, and the recipe adapts to any number of ripe bananas. |
