APRICOT CHICKEN 
4-6 chicken thighs (I soak them in salt water 1 hour before use)
Apricot preserves
1 sm. bottle Russian Dressing
1/2 pkg. Lipton Onion Soup Mix

Place thighs in 9x13 pyrex dish. Add bottle of Catalina dressing. Put 1 large tsp. apricot preserves on to of each piece of chicken. Sprinkle onion soup mix on top of each piece. Bake at 375 degrees until tender. Baste once or twice during cooking.
