APRICOT CHICKEN 
2 lb. chicken (breast or thighs)
8 oz. apricot preserves
8 oz. Italian dressing

Brown chicken in frying pan. Puree preserves with salad dressing. Place chicken in 2 quart casserole, then pour apricot mixture over chicken. Bake at 350 degrees for 45 minutes or until done.
