HAM STIR FRY 
1 tbsp. margarine
1 1/2 lbs. cooked ham, cut in 1-inch strips
2 lg. onions, sliced
2 lg. green peppers, sliced
2 c. unsweetened pineapple chunks, juice packed
2 tbsp. cornstarch
3/4 tsp. salt
1/4 tsp. pepper
1 tbsp. soy sauce

Melt butter in large non stick skillet. Add ham, onion and green pepper and saute over moderate heat until ham is browned. Drain pineapple, reserve juice. Add enough water to the juice to make 3/4 cup liquid. Combine cornstarch, salt, pepper, soy sauce and pineapple liquid in bowl. Add this to ham and vegetables and continue cooking over low heat, stirring until sauce has thickened. Add pineapple, heat. I serve with rice.
