BROCCOLI PUFF 
2 tbsp. minced onion
1/3 c. butter
1/3 c. flour
3 c. milk
2 eggs, slightly beaten
2 tsp. salt
1/8 tsp. pepper
3 c. (1 1/2 lb.) minced broccoli

Saute onion in butter in large heavy pan until tender. Stir in flour. Remove from heat and stir in milk. Return to heat, cook and stir until thickened. Then stir small amount into eggs, then stir eggs into sauce. Add salt, pepper and broccoli; mix well. Turn into greased 1 1/2 quart casserole dish. Bake in preheated oven at 350 degrees for 40 minutes or until knife inserted in center comes out clean.
