BROCCOLI PUFF 
2 (10 oz.) pkg. chopped broccoli
3 eggs, separated
1 tbsp. all-purpose flour
Pinch ground nutmeg
1 c. mayonnaise
1 tbsp. butter, softened
1/4 tsp. salt
1/4 tsp. pepper
1/4 c. plus 1 tbsp. grated Parmesan cheese

Cook broccoli by directions; drain well. Beat egg yolks. Add flour, mixing well. Stir in nutmeg, mayonnaise, butter, salt, pepper and cheese. Add broccoli, mixing lightly.

Beat egg whites (at room temperature) until stiff but not dry. Gently fold into broccoli mixture. Pour into lightly buttered 9 inch 5-quart baking dish. Bake at 350 degrees for 30 minutes. Cut into squares.
