CARROT-RAISIN SALAD | |
3/4 lb. carrots, scraped and shredded 1/4 c. plus 2 tbsp. raisins 1/4 c. plus 2 tbsp. chopped walnuts 1/2 c. mayonnaise 1 1/2 tbsp. cider vinegar 1 tbsp. sugar 1/8 tsp. lemon juice Combine carrots, raisins and chopped walnuts in a bowl. Combine remaining ingredients, stirring well; add to carrot mixture. Toss gently. Yield: 4 servings. |
