ROASTED PORK TENDERLOIN WITH
BLUE CHEESE
 
2 tbsp. melted butter
1 lb. pork tenderloin, trim off fat
2 tbsp. chopped fresh parsley or 1 tbsp. dried flakes
2 tbsp. chopped fresh thyme or 1 dried thyme
2 c. mixed salad greens
2 tbsp. chopped fresh oregano or 1 tbsp. dried
1 tbsp. sage
1/4 tsp. salt
1/8 tsp. black pepper
1/2 c. (2 oz.) blue cheese, crumbled

Mix all together and cook.
