APRICOT DELIGHT 
1 lg. pkg. apricot gelatin
2 c. boiling water
2 c. cold water
1 #2 can crushed pineapple (drain & save juice)
2 lg. bananas (sliced)
2 c. miniature marshmallows

Dissolve gelatin in boiling water. Add cold water. When gelatin is slightly set, add remaining ingredients. Mix and let congeal.

TOPPING:

1/2 c. pineapple juice
1 tsp. butter
1/2 c. sugar
3 tbsp. flour

Combine together. Cook over low heat until thickened. Add 1 (3 ounce) package cream cheese at room temperature. When cool add 1 small container of Cool Whip. Spread over congealed gelatin and sprinkle with coconut.
