CHICKEN - ARTICHOKE SALAD 
7 oz. chicken flavored rice mix (Rice-a-Roni)
6 green onions, sliced thin
1/2 c. chopped green pepper
1/4 c. sliced pimento
Sliced black olives
2 (6 1/2 oz.) jars marinated artichoke hearts
1/3 c. mayonnaise
1/4 tsp. curry powder
3 c. cooked, diced chicken

Prepare rice mix according to directions. Use 1/2 of artichoke marinade and small amount of butter to saute rice. Combine rice with onions, pepper, pimento and olives. Pour rest of marinade over rice mix. Slice artichokes and set aside. Mix mayonnaise and curry and add to rice and mix well. Add artichokes and chicken and toss lightly. Serves 5 to 6.
