ARTICHOKE RICE SALAD WITH
CHICKEN
 
1 pkg. chicken flavored rice
4 green onions, chopped
12 pimento stuffed olives
1/2 green pepper, chopped
3/4 tsp. curry powder
1/3 c. mayonnaise
2 (6 oz.) jars marinated artichoke hearts
2 c. chicken, cooked and cubed

Cook rice, omit butter. Add onions, chicken, pepper, and olives. Drain artichokes, reserve marinade. Chop artichokes. Combine for dressing: Curry powder Mayonnaise

Add artichokes to rice mixture. Dressing toss and chill. To make a 9 x 13, double recipe. Use about 1 cup of mayonnaise.
