CHICKEN AND ARTICHOKE SALAD 
2 jars artichoke hearts
1 sm. onion, chopped
2 tbsp. olive oil
Salt and pepper to taste
2 c. chicken, cooked and cubed
1/4 c. black pitted olives
Lettuce leaves

Drain the liquid from the artichokes and place the liquid in a saucepan. Add onion, olive oil, salt, and pepper. Cook at medium heat until onion is tender. Add the artichoke hearts and simmer for 15 minutes. Remove from heat and cool. Add chicken and artichoke mixture and olives. Chill. Place on bed of lettuce and serve.
