BLUEBERRY - ORANGE BREAD 
2 tbsp. butter
1/4 c. boiling water
About 2/3 c. orange juice
4 tsp. orange rind, grated
1 egg
1 c. sugar
2 c. all-purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 c. washed fresh or drained frozen blueberries, thawed
2 tbsp. honey

Melt butter in boiling water in small bowl. Add 1/2 cup orange juice and 3 teaspoons rind. Beat egg with sugar until light and fluffy. Add sifted dry ingredients, alternately with orange liquid, beating until smooth. Fold in berries. Bake in 9 x 5 x 3 inch loaf pan. In preheated slow oven at 325 degrees for about 1 hour and 10 minutes. Turn out on rack. Mix 2 tablespoons orange juice, 1 teaspoon rind and honey, spoon over hot loaf. Let stand until cold. Makes 1 loaf.
