BEEF, RICE & CHEESE CASSEROLE 
3 tbsp. corn oil
1 c. uncooked rice
2 onions, thinly sliced
1 1/2 lg. ground beef
1 can ripe olives, drained & chopped
1 tsp. chili powder
1/2 chopped cheese, cut in strips
1 1/4 c. tomato juice
2 c. water
1 env. beef noodle mix

Heat oil in skillet. Add rice and onion, cook over low heat, stirring frequently until golden. Remove rice and chili powder with meat. Arrange layers of half the meat and rice mixture, olives and cheese in 2 quart casserole. Repeat. Bring tomatoes and water to a boil in saucepan. Stir in soup mix. Pour in casserole, do not stir. Cover tightly. Bake in oven at 350 degrees for 45 minutes. 6 servings.
