BEEF STROGANOFF 
2 tbsp. oil
1/2 quilo (1 lb.) fillet of beef
1/2 tsp. each salt and pepper
1 medium onion, chopped
3 tomatoes or 1 tbsp. ketchup
1 sm. can whole mushrooms (fresh ones can be used)
1 sm. can evaporated milk or 1 c. light cream

Fry meat in butter (beat should be cut in thin strips) until tender; salt and pepper it. Fry onions until tender. Return meat to skillet. Add tomatoes or ketchup. Cook 5 minutes. Add evaporated milk or light cream. Stir in mushrooms last. Serve with rice.

Serves 6 to 8 people.
