BROCCOLI CASSEROLE II 
3 (10 oz. ea.) pkgs. frozen chopped broccoli
1 (10 oz.) can cream of mushroom soup
1 sm. jar Armour dried beef
1 can sliced water chestnuts, drained
1/2 cup mayonnaise
1 cup sharp Cheddar cheese, grated
1/2 cup (1 stick) butter
1 sm. box Cheez-It crackers

Cook broccoli as directed and drain. Cut up Armour dried beef into strips and mix into broccoli. Add mushroom soup, water chestnuts, 1/2 cup mayonnaise, and cheese. Place into casserole dish. Crush cheese crackers and melt butter. Mix butter and crackers. Top or sprinkle onto casserole.

Bake uncovered at 350°F for 30 minutes.

I was interested in this recipe because of the use of The Armour dried beef. I have some on hand and was looking for new ways to use it besides just Creamed Chip Beef (which we luv!).
Additional information would be helpful for correct measurements:
- 1 sm box (how many ounces?) Cheez-it crackers. I had the family and individual sizes on hand. Would have been helpful to know how much was needed; I guessed.

The only changes I made (so I could try it as close written before I did modifications)-
- Used Mild cheese instead of sharp
- added 3/4 cup Bella sliced fresh mushrooms (only because I had them on hand)

After eating, I found it to be a bit bland and dry for my personal preference. We both did enjoy the crunch of the water chestnuts. Would have liked more of the beef (hubby didnt even know it was in there), so I'd double the jars or use the large jar. And add some kind of seasoning (maybe Worcestershire sauce?) and an extra can of soup.

We will be making it again though. Thank you for sharing. This gives me the opportunity to tailor it to our families likes from yours :)
