BROCCOLI/CHICKEN/RICE CASSEROLE 
1 fryer
1 pkg. frozen cut broccoli
1 can cream of mushroom, cream of broccoli, or cream of chicken soup
1 c. uncooked rice
2 c. broth from chicken
Grated cheddar cheese (1 block)

Boil chicken and set aside 2 cups of broth. Debone chicken and set aside. Cook broccoli according to package. Cook rice in the 2 cups of broth; set aside.

Combine chicken, cooked rice, cooked broccoli, soup, and 1/2 of the cheese. stir all together and top casserole with remaining cheese. Cook in microwave or 350 degree oven until cheese on top is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.

This was a really easy recipe! Instead of the fryer chicken I used 3 chicken breasts, boiled them in water with 1 vegetable bouillon cube. I reserved some of the broth to make the rice. I also sautéed some garlic and onion and added it to the mix! I didn't mix in cheese, only sprinkled some on top, along with some crushed croutons for a nice crunch. Everybody loved it! Next time I might add slivered almonds or water chestnuts.
