EASY CHEESE STRATA 
1 lb. pork sausage
6 slices bread
8 oz. cheese - American, Swiss, Cheddar - sliced or grated
4 eggs
2 c. milk
1 sm. onion, finely chopped
2 tbsp. prepared mustard

Brown sausage and drain fat. Add mustard and mix.

Arrange bread in bottom of 13x9 inch baking pan. You might have to cut some in half. Layer sausage on top of bread, then cheese on top of sausage.

In a separate bowl beat eggs. Stir in milk, onion, salt and pepper. Pour over layers. Cover. Chill several hours or overnight. Bake uncovered, 325 degrees 1 1/4 hours or until knife comes clean. Let stand 5 minutes before serving.
