VERY BLUEBERRY MUFFINS 
1 1/3 c. flour
1 c. oatmeal (uncooked)
1/4 c. brown sugar
1 tbsp. baking powder
1/2 tsp. salt (optional)
1/2 tsp. cinnamon
1 c. skim milk
1/4 c. egg beaters (or 1 egg)
3 tbsp. vegetable oil
1 c. fresh or frozen blueberries

Heat oven to 425 degrees F. Spray 12 medium muffin cups with cooking spray.

Combine dry ingredients. Add milk, egg and oil; stir just until dry ingredients are moistened. Fold in blueberries. Fill muffin cups 2/3 full. Bake 25-30 minutes or until light golden brown. Makes 12 muffins.
