DATE NUT BREAD 
1 c. boiling water
1 c. chopped dates
2 tbsp. liquid lecithin
2 tbsp. shortening
3/4 c. honey
1 egg
1 1/2 c. unbleached flour
3/4 tsp. salt
2 tsp. baking powder
1 c. broken nut meats

Add boiling water to chopped dates and cook about 2 minutes, stirring constantly. Mix egg, shortening, and lecithin and beat. Add sifted dry ingredients, nuts, and honey; mix well. Pour mixture into greased pan.

Bake at 325 degrees for 1 hour and 15 minutes or until done. Makes 1 loaf.
