CRUNCHY HONEY BATTER BREAD | |
1 pkg. active dry yeast 2 2/3 c. flour 2 tsp. salt 2 tsp. shortening 1 1/4 c. warm water 1 c. Total or Wheaties cereal 1/4 c. honey 1/3 c. diced dates, raisins or chopped nuts (optional) Dissolve yeast in warm water in large bowl. Beat in 1 cup flour, cereal, salt, honey and shortening on low speed, scraping bowl constantly, 30 seconds. Beat on medium speed, scraping bowl constantly, 2 minutes. Stir in remaining flour and fruit or nuts. Scrape batter from side of bowl. Cover and let rise in warm place until double, approximately 45 minutes. Grease loaf pan. Stir down batter by beating 25 strokes. Spread in pan. Smooth out top of batter with floured hands. Cover and let rise until double - approximately 45 minutes. Heat oven to 375 degrees. Bake 40 to 45 minutes. Remove from pan. Brush top with butter. Cook. Makes 1 loaf. |
