PORK TENDERLOINS AND STUFFING 
1 tbsp. butter
1 1/3 c. apple cider, divided
2 c. herb stuffing mix
3/4 c. golden delicious apples, chopped
1/2 c. onion, minced
1/2 c. celery, minced
2 1 lb. pork tenderloins
salt and pepper to taste
4 slices bacon, halved widthwise

*STUFFING- Bring 1/3 c of cider and butter to a boil, remove, and stir in stuffing mix. Add the apples, onion, and celery; then set aside.

*TENDERLOINS- Rinse each one, pat dry with paper towel. Slice each tenderloin lengthwise then flatten them out, cut side up, cover with stuffing mixture; press the other tenderloin on top forming a sandwich. Skewer pieces together with toothpicks. Place in a shallow roasting pan; pour remaining cider on top. Arrange bacon slices evenly on meat.

Bake at 350°F for approximately 1 1/2 hours, or until meat thermometer reads 160°F. Basting occasionally with cider until meat is browned. Discard bacon if desired.
