WW CHICKEN CHALUPA CASSEROLE 
1 c. chicken bouillon
1 c. celery, chopped
1 c. mushrooms
1 c. skim milk
2 chopped jalapenos
Salt and pepper
8 (6 inch) tortillas
4 oz. grated cheese
4 oz. onion, chopped
1 bell pepper, chopped
1/2 c. pimento, diced
2 tbsp. cornstarch
1/2 tsp. garlic salt
4 tsp. butter
12 oz. cooked chicken

Combine bouillon, onion, celery and bell pepper. Cook until tender. Add mushrooms, pimento, milk and cornstarch. Cook until thickened. Add jalapenos, garlic salt, salt and pepper. Add butter. Remove from heat.

In casserole dish layer tortillas, chicken, sauce. Top with cheese. Bake at 350 degrees for 30 minutes. Serves 4. (4 protein, vegetables, 1/2 milk, 1 bread)
