PERFECT FRENCH FRIES 
Baking potatoes, peeled, 1 per person
Vegetable oil for deep frying

At least 15 minutes or up to 5 hours before serving. Slice potatoes into 3" x 3/8" strips. Rinse potato strips in colander under cold running water. Drain on paper towels. Fill deep fat frying or heavy Dutch oven with 2" oil. Heat to 325 degrees. Pre-fry 3 to 4 minutes at 325 degrees. Remove from oil, place on paper towel. Cool at room temperature, 15 minutes to 5 hours. Heat oil to 375 degrees. Fry potatoes again 2 to 3 minutes until golden brown. Drain on paper towels. Salt and serve.
