APPLE BREAD 
1 c. sugar
1/2 c. shortening
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 c. chopped apples
1 tbsp. sugar
1/4 tsp. cinnamon
1/2 c. chopped nuts

Mix 1 cup sugar, shortening, eggs and vanilla. Stir in flour, baking powder and salt until smooth. Stir in apples and nuts. (Mixture will be thick). Spread in pan. Mix the tablespoon of sugar and cinnamon to sprinkle over batter. Bake at 350 degrees for 50 to 60 minutes, until wooden pick inserted in center comes out clean. Remove immediately from pan. Yields 1 (9 x 5 x 3) pan, or 3 smaller ones.
