APPLE EGGNOG BREAD
1/2 c. butter
1 1/4 c. sugar
2 eggs
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. mace
1/2 c. eggnog
1 big apple, peeled and grated
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Grease 2 (8 x 4 x 2 1/2-inch) loaf pans. Cream butter, sugar, and eggs. Add flour, baking soda, and mace alternately with eggnog. Beat for 2 minutes with an electric beater at moderate speed.

Stir in grated apple and walnuts. Blend well and pour batter into prepared pans. Bake for 40-50 minutes or until done.

NOTE: Keeps well when refrigerated for a few days. A delicious way to utilize leftover eggnog during the holidays.
