CARAMEL-APPLE BREAD PUDDING 
butter, softened
5 slices bread
2 eggs
1 1/2 c. half and half
1 1/2 c. applesauce
1/3 c. sugar
1 tsp. vanilla
1/4 tsp. salt
1/4 tsp. ground cinnamon
Caramel Sauce below

Heat oven to 350 degrees. Lightly butter bread. Fit 2 1/2 slices, buttered sides up, into ungreased square baking dish (8x8x2). Beat eggs in medium size bowl. Stir in remaining ingredients except Caramel Sauce. Pour half of the egg mixture into baking dish. Top with remaining bread and egg mixture. Bake uncovered for 50 to 60 minutes or until knife inserted 1 inch from edge comes out clean. Serve warm or cold with the Caramel Sauce and ice cream. Keep refrigerated.

CARAMEL SAUCE:

2/3 c. packed brown sugar
1/2 c. light corn syrup
1/2 c. half and half
2 tbsp. butter

Heat all ingredients to boiling in 1 quart saucepan over medium-low heat, stirring constantly. Serve hot or cold. Serves 8.
