CRANBERRY PORK CHOPS 
6 pork chops
2 c. fresh cranberries
1 c. sugar, white or brown
1 c. water, or cider

Dredge the pork chops in flour and brown them in a little fat or salad oil in skillet. Add cranberries, sugar and water. Cover the skillet and bake in a 350 degree oven for 1 hour. Uncover for the last 30 minutes. Cranberries, sugar and water make a delightful fruity sauce for the chops. Serve with baked sweet potatoes.

Before coating in flour, I salted and peppered the pork chops. After browning the chops in olive oil/butter, I tossed the cranberry/water/sugar mixture into the pan so as to collect the juices. I cut down on the amount of sugar recommended, i.e. for two chops: 2 cups cranberries, 2/3 c. sugar, 2/3 c. water. I thought my version spectacular!
