ITALIAN RICOTTA COOKIES 
2 sticks butter
1 c. Ricotta
2 tsp. vanilla
2 c. sugar
2 eggs
4 c. flour
1 tsp. baking soda
1 tsp. salt

Allow butter to soften. Blend with Ricotta until creamy. Add vanilla. Mix well. Add sugar gradually, beating until well blended. Add eggs and mix well. Slowly stir in dry ingredients and blend well. Drop from a teaspoon on greased baking dish. Bake at 350 degrees for 10-12 minutes. Makes about 72 cookies, depending on size. Use greased cookie sheets.
