FLOUNDER STUFFED WITH CRAB 
2 tbsp. butter
1/4 c. finely chopped onion
1/4 c. finely chopped celery
8 oz. crabmeat, picked over
1/4 c. mayonnaise
2 tsp. Dijon-style mustard
1 tbsp. lemon juice
Dash hot pepper sauce
Paprika
6 flounder or sole fillets
Salt and pepper to taste
2 tbsp. melted butter

Preheat oven to 400 degrees. Butter a 9 inch square baking dish. In small skillet, melt butter and saute onion and celery until tender, about 5 minutes. In bowl, combine crabmeat, mayonnaise, mustard, lemon juice, hot pepper sauce and a pinch of paprika. Blend in onions and celery. Sprinkle skinned side of fillets with salt and pepper to taste.

Divide crab mixture into six portions and place one portion at wide end of each fillet. Roll up fillets and place seam side down in dish. Brush with melted butter and sprinkle with more paprika. Bake 20 minutes. 6 servings.
