EASY STUFFED FLOUNDER 
1 (1 lb.) pkg. frozen flounder fillets
1/2 cup diced, pared carrots
1/4 cup chopped celery
1/4 cup chopped green onion
1/4 cup chopped mushrooms
4 tbsp. (1/2 stick) butter, divided
1 cup fresh bread crumbs (2 slices)
3/4 tsp. salt
2 tsp. lemon rind

Thaw flounder; separate fillets and dry well on paper towels. Preheat oven to 350°F.

Sauté carrots, celery, onions and mushrooms in 2 tablespoons butter until soft. Stir in bread crumbs and 1/4 teaspoon salt. Sprinkle remaining salt over flounder.

Place half in a single layer in a greased 10x8x2-inch baking dish. Spoon vegetable mixture over flounder; layer rest of fillets on top. Dot remaining butter over fish; sprinkle lemon juice on top. Cover.

Bake at 350°F for 30 minutes or until flounder flakes easily. Serve from baking dish.

Makes 4 servings.

I just used this recipe tonight. We had frozen flounder in the fridge and I prepped all the veggies yesterday. It was absolutely delicious and my wife agreed. There is nothing left and what more can you ask for than that. We'll be using this one again. It is all baked and I do believe my Cardiologist would have its highest approval. No cans, and everything is fresh.
