A surprise cobbler, batter rises to the top during cooking and forms a golden crust.

1/4 c. butter
1 c. sifted all-purpose flour
1 c. sugar
1/8 tsp. salt
1 tbsp. baking powder
2/3 c. milk
1 (#2 1/2) can sliced peaches
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/2 tsp. lemon peel

Melt butter in a 7 x 11-inch shallow baking dish. Sift together dry ingredients; add milk and stir well. Pour this mixture into the baking dish. Do not stir. Top with peaches, including juice. Sprinkle nutmeg, cinnamon and lemon peel over peaches, but do not stir. Bake in 350 degree oven 40 minutes or until golden brown. Serve warm with cream. Serve 6 to 8.
