POTATO CANDY | |
1 sm. potato 1 lb. 10X sugar 1/4 c. peanut butter Pinch of salt 2 tsp. vanilla 2 tsp. vinegar Peel and cut up potato; cook. Add salt, vanilla, vinegar and 1 cup of 10X sugar at a time until the whole pound is mixed. Form into a ball. Using a rolling pin, roll out candy mixture very thin on surface lightly dusted with 10X sugar. Spread on thin layer of peanut butter. Roll up candy like a jelly roll. Slice. Uneaten candy should be refrigerated. |
