BROCCOLI CORN BREAD MUFFINS 
1 box Jiffy corn bread mix
1 chopped onion
1 stick butter, melted
1 c. grated sharp cheese
4 eggs, beaten
1 box frozen chopped broccoli, thawed and squeezed out excess liquid
1/2 tsp. salt

Mix all ingredients and cook 30 minutes at 350 degrees. Makes 12-18 muffins.
