CORN BREAD - MUFFINS 
1 c. flour
1/2 tsp. salt
4 tsp. baking powder
1 c. cornmeal
1/4 c. sugar
2 eggs
1 c. milk
1 tbsp. vegetable oil

Mix dry ingredients. Add milk, eggs and oil. Beat well. Pour into loaf pan or muffin tins that are well greased. Bake at 375 degrees. Loaf - 25 minutes; muffins - 15-18 minutes; mini-muffins 8-10 minutes.

Just got these muffins out of the oven and had to have one. They are very, very good. This is the best recipe for corn muffins that I have made yet. And believe me I have made plenty different recipes. I will make these again, for sure.
