CARIBBEAN SALAD 
1 c. mayonnaise
1 lg. banana, sliced
1 tsp. lime juice
1 c. whipped cream
1 c. (15 1/4 oz.) drained crushed pineapple
1/2 c. chopped maraschino cherries
1/4 c. powdered sugar
1 tsp. grated lime rind
3 tsp. light rum or 3/4 tsp. rum flavor

Toss banana slices with lime juice. Fold mayonnaise into whipped cream already whipped. Add to bananas. Combine remaining ingredients. I usually add a drop of green food coloring to this. Spoon into 9 inch pie plate and freeze. Remove just before serving - so it can thaw some.
