GERMAN POTATO SALAD 
6 boiled potatoes, peeled and sliced
3 slices bacon
3/4 c. chopped onion
2 tbsp. flour
1/3 c. vinegar
1/3 c. sugar
1/2 tsp. salt
Dash of pepper
3/4 c. water

Boil potatoes; peel and slice into bowl after they have cooled.

Fry bacon until crisp; remove and set aside.

Fry onion in bacon fat until yellow. Mix in the flour, sugar, salt and pepper. Gradually stir in water and vinegar, stirring constantly, until all comes to a boil. Boil for 1 minute; pour over the potatoes. Add the bacon and let stand for several hours.
